For hae day :-) 2022, HAE Scandinavia invited its members to join together and bake a cake. This is their recipe for Aunt Bente’s quick chocolate cake.

- 350 g white plain flour
- 300 g granulated sugar
- 1 tsp baking soda/bicarbonate of soda
- 3 whole eggs
- 150 g butter
- 150 g dark chocolate
- 4 dl/400 ml orange juice
Eggs and sugar are beaten together until light and fluffy.
Meanwhile, put butter and chocolate in a saucepan and melt over low heat. Take it off as soon as it is melted and stir together until thoroughly mixed. The mixture is slowly poured into the beaten eggs and sugar. Orange juice is added and stirred in.
Flour and baking soda are mixed in a separate bowl and sifted into the cake batter.
The batter is poured into a cake tin, lined with baking paper approx. 30 x 20 cm and baked in the oven at 170 oC (around 150oC for fan-assisted ovens) for 35 mins. Use your finger to lightly tap the center of the cake – if it feels firm and springy, the cake is done.
The batter can also be used in muffin tins and cakes baked for a shorter time.
